Last night 'The Curious Mind of P.J. Rigney' & the Shed Distillery led us on a journey through their portfolio of gin, vodka and soon to be released whiskeys. Although not quite ready, this is a glimpse of what's to come later in the year.
To start we tasted Drumshanbo Single Pot Still - new make spirit at 63.5% ABV from last week's distillation. This is the DNA of the whiskey and is an early indication of the quality you would expect from Drumshanbo. Very clean, no ethanol burn. Oily and very soft with the usual spice mouthfeel. Amazing balance overall. Beautiful.
Next up Drumshanbo Single Malt (46% ABV) just over 4 years old in first-fill ex-Bourbon casks. Lovely straw colour, fantastic nose! Custard, caramel, vanilla. Bourbon shines through on this. Delicate and well balanced.
Finally it was the Drumshanbo Single Pot Still (46% ABV). The 1st Single Pot Still in over 101 years to come out of Connacht. 47%/48% malted/unmalted & 5% oats. Again just over 4 years old from First-fill ex-Bourbon (75%) Sherry (20%) some Marsala. Spice, sweet & dried fruits.
Great night. Looking forward to seeing what the new whiskey will look like.
